Recognizing, collecting and cooking wild herbs represent ancient knowledge which today is an innovative way of recovering the traditions of the past and the wild raw materials of the area.
In fact, foraging consists of going through woods and fields to collect wild herbs, plants and fruits to create authentic dishes. Some of our products such as Giulebbe and mielata are in fact prepared starting from this practice.
In the company of a environmental guide, an expert in the territory and wild cuisine, you will have the opportunity to regenerate yourself in the uncontaminated nature of the ancient Monte Amiata volcano, picking its seasonal fruits: mushrooms, chestnuts, dandelion, stridolacchio, vitalba and much more. The guide will be able to provide technical details and curiosities about the products collected and, at the end of the tour, will provide practical information on how to use them at home, together with a recipe book created for the occasion.
